History
The founders of Baja Fresh were, like many Americans in the 80s and 90s, raised on fast food. However, after growing up eating at greasy joints, they realized it was time for a change in the fast-casual industry. They wanted to create a place in which heavily-processed, dehydrated and frozen foods were nowhere to be seen and instead, in which all food items were made from fresh ingredients daily.
In addition to wanting to provide fresh menu items, the founders also envisioned a fast-casual restaurant that felt different than other fast-food restaurants. Cue the patios, bright lights and comfortable seating.
After working on their vision, the founders finally opened their first restaurant in August of 1991. The original served fresh, traditional fire-grilled Mexican favorites, which it continues to do to this day.

Because franchisees need to be able to serve hungry patrons at all times, it would be beneficial if franchisees had a relevant background in hospitality. However, because the franchise does offer such extensive training, experience is not necessary.
